What is fermentation?
As early as 5,000 years before Christ, people in Babylon used the art of fermentation to preserve and extend the shelf life of food. Fermentation refers to the transformation of organic substances by bacteria, fungi, or cell cultures. The most well-known fermented food is sauerkraut.
To ferment a food, natural microorganisms such as yeast or bacteria are added to fruits, nuts, and vegetables. The food is then stored in an airtight container. During storage, the added ferment cultures alter and refine the nature of the original food, enhancing the effects of the plant components.

Cascade fermentation is the optimum in the field of food digestion. In this multi-stage fermentation process, successive partial fermentations mimic our body's natural digestive system.

Fresh, sun-ripened fruits, nuts and vegetables from organic farming are washed, chopped and placed in a fermentation tank, a so-called fermenter. Lactobacilli (lactic acid bacteria) are added to the mixture, which produce clockwise L(+)-lactic acid. The first fermentation begins after about two days.
2nd step - ever finer separation
The first partial fermentation follows after about two to three weeks. The fermented material is prepared again for fermentation with the addition of new lactic acid bacteria. Further fermentation stages follow this principle. This results in an increasingly fine breakdown of the ingredients.
3rd step - the Regulatessenz® in perfection
All fermentation fractions are brought together, subjected to another overall fermentation process and finally centrifuged. The ingredients are now in a unique breakdown. Thanks to the gentle, special process of cascade fermentation, the use of preservatives, chemical additives, sugar and alcohol can be avoided during the production of Regulatessenz®.
